The perfect sausage roll

Updated: Dec 27, 2020

While many of us consider Michelin-starred cuisine to be very fancy, French-inspired food (although, to their credit, Michelin are taking steps to break away from this), its roots are far more humble. It's no coincidence that the restaurant-rating institution has the same name as your tyres. To encourage driving in France in 1900, the Michelin brothers created a guide of useful things when driving — from changing your tyre, to maps, to restaurant recommendations. By 1931 they had created the 3-star system we know today, with 2 stars denoting that a restaurant was, "worth a detour," and 3 stars meaning it was, "worth a special journey." So what does this all have to do with sausage rolls? Simply put, even in lockdown times, these sausage rolls are worth a (safe) special journey.

The Ginger Pig began its tale (ha!) on a farm in North Yorkshire. Today, rare breeds and animal welfare remain at the heart of what they do. Their sausage rolls are handmade and served warm. The generously portioned lightly-herbed pork is always amazingly moist; and the pastry is out of this world — just slightly soggy in the middle, and wonderfully buttery and flaky on the outside. The whole thing somehow retains its shape and is delicious by itself, with a dab of mustard, or even some of the Ginger Pig's own umami-rich chilli jam. We can honestly say that this sausage roll is flawless.

If you're in for a sausage roll, do check out their quality meat. They'll prepare all sorts of cuts and give wonderful cooking ideas and advice. Plus, they are always very kind to our dog, Alfie (even though he's not allowed inside!), by giving him plenty of scraps and bones which he can't get enough of!

The Ginger Pig has seven shops in London (including at Borough Market) and one in Loughton, and they do nationwide delivery. If you're going to make a special lockdown journey for one thing, let it be their sausage roll!

Stay salty af,
