How to make the perfect rainbow cocktail

It's Pride Month! Usually the streets would be filled with rainbows, so when walking around the eerily grey streets of Soho in June (to Gerry's, of course), we knew we had to bring the rainbows to us this year.


Rainbow cocktails look amazing, but to have the colours stay in layers and also taste delicious is a challenge. The key to the colours staying put is having different viscosities, but often thick, brightly-coloured liquids means a sickly sweet drink. To counter that, we've added plenty of acidity and ice to create a nicely balanced version.


But before we go onto the recipe, it's important to remember why Pride is still so important, even in a relatively liberal place such as the UK. For example, did you know:


⦁ Two-thirds of LGBTQIA+ people in the UK don't feel comfortable holding their partner's hand in public.


⦁ More than a third (35%) of trans young people have experienced physical assault.


⦁ Over a third of trans people avoid expressing their gender through physical appearance for fear of being assaulted, threatened or harassed.


⦁ 38% of British people still don't believe it's appropriate for their LGBTQIA+ colleagues to be out at work.


⦁ Whilst we're all in lockdown for a few months, travel is always more challenging for LGBTQIA+ people. Same-sex activity is illegal in common holiday destinations such as Egypt, Morocco, Antigua, Barbados, the Maldives and Malaysia.


⦁ Growing up feeling like the way you are is wrong can severly impact mental health. LGBTQIA+ people are 1.5 times more likely than the general population to experience anxiety and/or depression.


⦁ Almost half of trans people in Britain have attempted suicide at least once; 84 per cent have thought about it.


So when you enjoy this rainbow cocktail this Pride month, please also commit to doing what you can to making this wonderful world an even more kind, inclusive, and welcoming place!

Perfect rainbow cocktail

What you will need:


A large glass (we used a gin copa)


Lots of crushed ice (you can use a blender to crush ice cubes)

50ml Grenadine

25ml blue curaçao

25ml white rum

50ml passion fruit purée (Funkin or Boiron work well)

First, carefully pour the grenadine into the glass, letting the syrup settle so that it doesn't touch the sides of the glass. Next, add all the crushed ice so it's roughly packed to near the top of the glass. Carefully pour the passion fruit purée on top, so it's an even layer in the glass. Finally, mix the blue curaçao with the white rum and pour on top in a similar fashion for the final layer. Admittedly this cocktail is more for the aesthetics than the taste, but we think this version tastes pretty great! The passion fruit purée adds freshness and acidity, which we much preferred over other versions which use sweet pineapple juice for the yellow layer. Try it and let us know what you think!
